Healthy Ginger Garlic Noodles with Chicken is chock full of heart-healthy vegetables and lean chicken, simmered in a delicious garlic honey sauce. It doesn’t get any better than this!
As much as I love eating, I don’t love all the extra pounds that have crept up on me over the years. This past year, while at college, my son successfully lost 65 pounds and his efforts inspired me to lose some weight and get healthier too. I’m not going to lie, it has been a struggle, I like food too much. But…I’ve lost 21 pounds so far. I started with the keto diet, thinking I would like all the bacon, eggs, etc., but am not a big meat eater, so hated it. Late July, I started a modified Mediterranean Diet. The focus of the Mediterranean diet is fresh fruits, vegetables, legumes, and whole grains, with minimal meat, sugar, and refined carbohydrates. Healthy Ginger Garlic Noodles with Chicken is one of the new dishes I created since I’ve started the Mediterranean diet. Surprise, surprise, my family loved it and your family will love to too, whether you are doing the Mediterranean Diet or not!
Garlic Ginger Noodles with Chicken
- 1/2 c. Carrots, cut into 2-inch julienned pieces
- 1 c. Broccoli florets with stems removed
- 1/3 c. Shredded Cabbage
- 3 Stalks Green Onion
- 1/3 c. Red or Yellow Pepper
- 1/2 c. Snow Peas, cut into bite-sized pieces
- 3 cloves Garlic, chopped fine
- 1/3 c. Red Onion, sliced thin
- 3 Tbsp. Fresh Ginger, Grated
- 1 tsp. Better Than Bouillon Roasted Garlic Base
- 3 Tbsp Honey
- 3 Tbsp. Sesame Oil, divided
- 1/3 c. Low Sodium Soy Sauce
- 2/3 Package Whole Wheat Linguine Noodles
- 2 Boneless, skinless Chicken Breasts, cut into cubes.
Cook the noodles according to directions, drain and set aside.
Clean and cut the carrots, broccoli, cabbage, green onion, red pepper, and snow peas and set aside in a dish. Peel and chop the garlic and slice the onion and set aside in a dish. Grate the ginger. In a measuring cup whisk the ginger, Bett Than Bouillon Roasted Garlic, honey, 1 Tbsp of the sesame oil, and soy sauce together and set aside.
In a large pan, add the remaining 2 tablespoons of sesame oil and heat on medium heat. Add the cut pieces of chicken and stir fry on one side for 5-7 minutes, then the other side for 4-5 minutes until brown and cooked through. Add garlic and onion and stir fry for 2-3 minutes, then add the remaining vegetables and stir fry for 2-3 minutes. Add the ginger honey sauce and stir the chicken and vegetables to coat. Reduce heat to medium-low and simmer 3-4 minutes. Remove from heat and cool for about 5 minutes. Pour the chicken, vegetables, and sauce over the noodles, toss to coat, and serve.
