Lemon Herb Roasted Brussels Sprouts Salad

I love Brussels Sprouts any way I can get them, but with the days warming in Arizona, I prefer cool salads with dinner instead of warm vegetables.  This Lemon Herb Roasted Brussels Sprouts Salad is quick roasted, cooled, then tossed with sunflower seeds, dried cranberries, crumbled blue cheese, and Wish Bone® EVOO Lemon Herb Dressing for a refreshingly light and crunchy dish.  I loved this salad so much, I made it as a side dish for a weeknight dinner, then had the leftovers as lunch the next day!

Wish Bone Lemon Herb EVOO Dressing

Lemon Herb Roasted Brussels Sprouts Salad

  • 1 lb. Fresh Brussels Sprouts
  • 2 Tbsp.  Wish Bone® Lemon Herb EVOO Dressing
  • 1/4 c. Dried Cranberries
  • 1/4 c. Roasted Sunflower Seeds
  • 1/2 c. Wish Bone® Lemon Herb EVOO Dressing
  • Crumbled Blue Cheese to taste

Preheat the oven to 350 degrees.  Wash and trim the ends off the Brussels Sprouts, then slice in big chunks and place in a large bowl.  Toss the Brussels Sprouts with the 2 tablespoons Lemon Herb dressing, then spread out on a foil-lined baking sheet.

Roast in the oven for about 15 minutes, but watch that they do not burn.  Remove the Brussels Sprouts from the pan and place in a dish in the refrigerator for about an hour to chill.

Toss the Brussels Sprouts with the dried cranberries, sunflower seeds, and 1/3 cup of Lemon Herb dressing.  Serve with blue cheese to sprinkle on the salad.

These look so good. Funny, because I have never tried brussel sprouts, lol. I need to ASAP!
